Yummy Mix Vegetable Malai Kofta Curry

Let the love for curry prevails..

Sundays is all about comfort food,right? I absolutely love Sundays because it smells of comfort food. So, i decided to make Malai kofta curry today. Its not that complicated just a little bit time consuming but overall very finger licking curry. I almost swiped that flat bread twice around my plate to scoop the remaining bit of sauce left at the table today.This is my love for curry.

Ingredients that you would be needing for Vegetable Malai Koftas are as follows :

  • boiled potatoes, mashed
  • Half the amount of any mix vegetables packet
  • salt, to taste
  • 2 teaspoon cumin powder
  • 2 tablespoons gram flour
  • 1/2 cup bread crumbs
  • Onions, roughly chopped
  • Cloves and Garlic
  • Ginger
  • 2 green chillies, roughly chopped
  • oil for pan frying

First combine all your ingredients together until a coarse dough mixture is obtained. Then make into small balls and roll into some breadcrumbs until they get coated evenly.Heat some oil in a pan and medium fry the koftas until golden brown on both sides.Set aside to rest so that they become more firm and do not split in the curry.

Heat a tablespoon of oil in a non stick pan; add onion-ginger-garlic paste. Saute until the raw smell goes away. Add in the pureed tomatoes the Garam massala mix in the gravy and let it simmer for 10 minutes until the tomatoes are cooked and the gravy is thickened. You can then add a good spoonful of cooking cream for a more creamy texture.Add in the pan fried Vegetable Kofta Balls and simmer for another couple of minutes. Garnish with some chopped coriander and serve with rice or hot parathas/flatbread along with a coconut chutney. I think you will be fully stuffed after!
