Tender moist chicken pieces with grilled veggies.Who doesn’t love them especially on a Sunday!😍
Sundays are always meant for comfort food. Even the air smells of delicious aromas to me. Whenever it’s Sunday, all I dream about is good food,some nice refreshments,the sun caressing my skin and all these in the garden or better by the sea. Sundays are magic,there is something else about them. Or maybe I am crazy haha. 😂
I never made chicken skewers before. I happened to have had some chicken breasts left and I didn’t quite know what to make of them. Besides my siblings had grown quite bored of chicken curry. You can’t do much with tender pieces of chicken because they mustn’t be overcooked else they lose their moist and juicy part and become rather elastic. So chicken skewers were best for today’s lunch.👍
We will start off by marinating the chicken so that they are even more tender and juicy when eaten. First cut up your chicken breasts into small bite sizes. Then for the marinate you’ll need:
- 1 plain low fat yogurt
- Garlic/Ginger paste
- Coriander leaves
- Cloves/Cinnamon powder
- Fish sauce/Oyster sauce/Soy sauce
- 1tsp of red chili flakes
- Half a lemon, juiced
Mix all the ingredients along with yogurt until a marinade paste is obtained.Then drop your chicken cubes into the mixture and coat well with the marinade. Leave to rest in the fridge for the whole night or atleast 5 hours before placing on the grill. Meanwhile prep your vegetables, you can take any vegetable of your choice. I had bell peppers readily available at home and baby corns. I assorted them with some cherry tomatoes and red onions.
I must confess at first I was a little bit confused like which to put first, the onions? or the baby corn? Still I am happy with the colourful finish. Looks so beautiful and full of colours. Thank god! 😀 Now comes the best part, the part where your whole kitchen is filled with the beautiful aroma of grilled chicken and veggies. Heat your grill pan to medium heat and drizzle a tsp of olive oil all over. Place your chicken skewers one by one on the pan and then let it cook slowly.From time to time brush with some sauce. I made my own marinade sauce from soy sauce/fish sauce/oyster sauce and honey. Can you smell it too? Amazing aromas isn’t it? 🙂
I served them with some spicy fries and coleslaw. My siblings end up licking their fingers so much they loved it. I did same too. Now its your turn to do same.So hopefully you will love them too. Do let me know how you like yours and if ever you use any other kind of marinade for your kabobs.
