A lot of vegetables lying around?
Do you have a lot of vegetables lying around and do not know what to make of it? Tired of making soup and stock. How about a stir fry? With chicken it works amazing! Chicken chop suey has always been an old time favourite and it goes along with just anything.On fried rice,in bread and as a starter as well. I love Chinese cuisine,one of the best part of our Mauritian culture is that it is packed with lots of different flavours from different communities and they all marry together to make it a rich combination.
In order to make this chicken chop suey for around 5 persons, you will need the followings :
- 500g of Chicken cubes
- 1 cup of Mushrooms
- 1 cup of Carrots sliced
- 1 handful of Pak Choi
- 1 cup of diced Onions
- 1 cup of diced Pattypan
- 2 tsp of Ginger paste
- 1 tsp of Oyster/Fish/Soy Sauce
- Pepper/Salt to taste
- Toasted Sesame seeds
- 2 tsp Sesame oil or Vegetable oil for cooking
First marinate your chicken cube with the ginger and sauces accordingly and leave to rest in the fridge for about 1 hour or so. In the mean time prep all your vegetables as shown in the picture below and set aside for later use.
In a wok heat the sesame or the vegetable oil. Add your chicken to the wok when medium hot. Then add 1/2 a cup of water and cover to simmer. After 15 mins or so the chicken will be half cooked. You can now drop in all your vegetables and mushrooms to the mix. Cover and let it cook for some good 30 mins more. You will notice an amazing smell coming from your wok. Lower your fire and leave it to sizzle some 5 mins more in the wok. Remove and serve with some sesame seeds sprinkled on top. Voila!
Your super easy Chicken chop suey is ready to be served. As I have said on top, you can serve it with almost anything, bread,on white fluffy rice or on fried rice.
