Rocking Aubergine Fritters – Gato Brinzel


Ah happy days!

Aubergine fritters literally scream childhood times and happy days to me.Also they are Mum’s and I favourite to have at breakfast with bread and butter. I simply love Aubergine fritters or as so commonly known here as ”Gato Brinzel“. Mauritius and Street Food goes hands in hands when it comes to speaking about traditions.They have long been part of the rich food culture we Mauritians have been growing up to. And Gato Brinzel is definitely one among those which reminisces the beautiful memories back. There is different interpretation of this recipe really where some do not use Gram flour and also where some add extra spices to make it more flavoursome. I wanted to keep it simple and trust me it does not compromise with the taste at all.

Serves 5

Preparation time : 45 mins

Cooking time : 20 mins

Ingredients :

  • 1 big sized round Aubergine
  • 2 cups of flour
  • 1 pinch of food colourant (Yellow)
  • 1 tsp of Salt/Pepper
  • 1/2 a cup of Gram flour (Bessan)
  • 1  cup full of water
  • Coriander leaves finely chopped (Optional)
  • Vegetable oil for frying




  • Slice the aubergines and salt accordingly (2tsp) leaving to rest for 15 mins.
    Note : You will notice quite an amount of water that will come out of them.It is fine.I like to do so in order to remove the slight bitter taste from the aubergines.Some people add 1 tsp of vinegar also because round aubergines tend to have a bitter taste.
  • In a large bowl start off by preparing your batter. Mix the flour as well as gram flour along with the other dry ingredients and water until a consistent batter is obtained.




  • Leave the batter to rest for 30 mins.
  • In a pan heat some vegetable oil for deep frying.
  • When the oil is hot enough,slowly dip the aubergines one at a time into the batter and fry.
  • Constantly flip over the fritters and remove when slightly puffed and brown.
  • Strain on paper towel and serve with a nice coriander mint chutney.



I like to have mine with some chilli-lime paste/chutney.Crispy hot and served with that chilli along with a hot cardamom chai! Oh mine I can die and go to heaven at that very moment so much they taste divine! I am sure you must have some good memories linked to this recipe as well. It is the case for all Mauritians especially on Sundays where we would have them pipping hot in our bread along with a few slices of the good old Kraft Cheddar  Cheese. Truly the good times!

I know some who would relate to this recipe especially my Indian food bloggers and  readers mainly.I know in India also they have Pakoras of all sorts and probably Aubergine also. Hopefully this recipe brings a smile on your face in remembrance to the childhood times.
