Need new recipes for Meat Free Mondays?
Meat Free Mondays campaign was launched by the famous Singer-Song writer Paul McCartney in 2009. It is a non-profit campaign aimed to raise awareness for the detrimental environmental impact of eating meat and also to encourage more people to go meat free for a change so as to preserve natural resources as well as improve their health in the long run. Since long I wanted to dedicate a food post to the Meat Free Campaign and finally it’s possible. Because I love curry, I thought why not start off with a good curry itself. Introducing the delightful Cauliflower curry which is a very popular dish among the Indian community and eaten with flatbread or white fluffy rice and a salad or coconut chutney as condiment.
This Curry also happens to be a classic here in Mauritius. We all go hmmmm when we hear that it is on menu tonight. At mine everytime it is being made, we instantly know it is in celebration to something special. Most of the time it will be to start any fasting period or sometimes to celebrate a birthday mixed in a soulful Briyani dish. So at mine whenever Cauliflower Curry is being made, the atmosphere almost changes from normal routine to something extra ordinary. We would gather sharp at seven and all ardent to tuck in while Mum gets the best puffed parathas hot from the stove directly to our plates. However this Curry bears its significance more because it is the one Curry that my GrandMa would always make whenever it was her birthday. That was her special really and to her sharing this Curry with us would be the absolute joy and sheer pleasure could be seen in her eyes.
Another substitute for this curry is with boiled eggs. Like 10 mins before turning off the gas, you add boiled eggs to the curry and let them cook for a while too. There are vegetarian whom I know eat eggs and some who don’t like to eat eggs. It all depends on you really. I had mine with white basmati rice and a good coconut chutney (Recipe soon). I love Meat Free Mondays because it’s a way to eat healthy and feel happy kind of day. Once a week it brings a great change to your eating habits in the long run.
I guess we all love Indian curry, right? Let me know which is your favourite curry and also with what do you like to have them.I like to eat naan only but then only when I eat curry out. So voila, my cauliflower curry recipe and very good also for those fasting or even on diet and looking for something easy and light. Do adopt and try it and let me know your views.Thank you for being regular on my blog and for the lovely feedback.
